-
Step 1.
In a large saucepan, combine the half-and-half, clam juice, and white wine. Set over medium heat and warm gently, stirring occasionally, until hot but not boiling; keep it warm while you prepare the shallot mixture.
-
Step 2.
In a separate saucepan, melt the butter over medium heat. Add the shallots and sauté until translucent, about 3 to 4 minutes, stirring occasionally so they soften without browning.
-
Step 3.
Add the flour to the butter and shallots, stirring constantly with a wooden spoon or whisk until the flour is fully absorbed and no dry pockets remain. Cook, stirring constantly, for 2 to 3 minutes to remove the raw flour taste; the mixture will look thick and pasty.
-
Step 4.
Pour the heated half-and-half mixture all at once into the shallot mixture, stirring constantly with a wire whip to prevent lumps. Continue whisking until the sauce is smooth and slightly thickened, about 1 to 2 minutes.
-
Step 5.
Add the spinach, artichokes, shrimp, cayenne, and black pepper to the saucepan. Stir to combine, then bring the mixture to a boil over medium-high heat.
-
Step 6.
Once boiling, reduce the heat to low and simmer for 3 minutes, stirring occasionally and scraping the bottom of the pan to prevent scorching. The dip should thicken slightly and the shrimp should turn opaque and pink.
-
Step 7.
Remove the saucepan from the heat. If using cheese, stir it in until fully melted and incorporated; the residual heat should be enough.
-
Step 8.
Pour the dip into a serving bowl and serve hot.
