Let's Cook

  1. Step 1.

Preheat the oven to 350°F (175°C) and position a rack in the center. While the oven heats, wash the broccoli thoroughly, then use a paring knife to trim away any tough or woody skin from the stems. Cut the broccoli into evenly sized pieces so they cook at the same rate.

  2. Step 2.

Bring a large pot of generously salted water to a rolling boil. Add the broccoli pieces and cook for about 10 minutes, until they are tender enough to be easily pierced with a knife but not falling apart. Drain the broccoli in a colander, then press or squeeze it well to remove as much excess water as possible—this keeps the final dish from becoming watery.

  3. Step 3.

Transfer the drained broccoli to a food processor and pulse until finely chopped, scraping down the sides as needed. Set the chopped broccoli aside. Meanwhile, in a medium saucepan, melt the butter over medium heat. Add the chopped onion and cook, stirring occasionally, until soft and translucent, about 5 minutes; do not let it brown.

  4. Step 4.

Sprinkle the flour over the softened onions and cook, stirring constantly, for about 1 minute to remove the raw flour taste. Slowly pour in the milk while whisking continuously to prevent lumps. Continue cooking over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 5–7 minutes. Then remove the saucepan from the heat.

  5. Step 5.

Stir the cheese into the hot mixture until it melts completely. Add the chopped broccoli and a few dashes of Tabasco, mixing well. Let the mixture cool slightly so it won’t scramble the eggs. In a small bowl, beat the eggs with a pinch of salt until frothy. While the broccoli mixture cools, butter a baking dish and dust it with bread crumbs, shaking out any excess.

  6. Step 6.

Gradually stir the beaten eggs into the cooled broccoli mixture until fully incorporated. Pour the mixture into the prepared baking dish and smooth the top with a spatula. Bake for 40 minutes, until the center is set and the top is lightly golden. Let it rest for a few minutes before serving.
