Let's Cook

  1. Step 1.

In a mixing bowl, combine the ingredients and stir just until a shaggy dough forms; do not knead it, as overworking will make the biscuits tough. The dough should be soft and slightly sticky rather than smooth and elastic.

  2. Step 2.

Turn the dough out onto a lightly floured surface and roll it out to about 1 inch thick, keeping the thickness even so the biscuits bake uniformly.

  3. Step 3.

Cut the dough into portions with a biscuit cutter or knife, pressing straight down without twisting so the edges stay clean and the biscuits rise well.

  4. Step 4.

Brush the tops of the cut biscuits with additional buttermilk, which will help them brown nicely in the oven.

  5. Step 5.

Arrange the biscuits on a greased cookie sheet, leaving a little space between them so they bake evenly.

  6. Step 6.

Bake at 400 degrees for about 15 minutes, until the biscuits are puffed and golden brown on top. They are done when a biscuit feels set and lightly firm to the touch.

  7. Step 7.

Remove the biscuits from the oven and serve them warm, or let them cool briefly on the sheet before transferring to a rack.
