Step 1.
In a small bowl, combine the warm water, yeast, and sugar. Stir until the yeast and sugar are dissolved, then set the mixture aside for about 5–10 minutes, until it becomes foamy. This indicates the yeast is active.
-
Step 2.
While the yeast proofs, in a large mixing bowl, prepare the pudding mix according to the package directions. Add the margarine, eggs, and salt, and mix well until fully combined.
-
Step 3.
Pour the foamy yeast mixture into the pudding mixture and blend thoroughly. Gradually add flour, about 1 cup at a time, stirring until the dough begins to come together. Turn the dough out onto a floured surface and knead until smooth and elastic, about 5–8 minutes, adding more flour as needed to prevent sticking.
-
Step 4.
Place the kneaded dough in a greased bowl, turning once to coat the top. Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm place until doubled in size, about 1 to 1½ hours.
-
Step 5.
Punch down the risen dough to deflate it, then cover and let it rise again until doubled, about 45 minutes to 1 hour. Meanwhile, prepare the filling: in a small bowl, mix together the brown sugar and cinnamon, and set aside. Also, lightly grease a large cookie sheet or two.
-
Step 6.
After the second rise, punch down the dough again. On a floured board, roll the dough out into a large rectangle, approximately 34 by 21 inches. If the dough resists, let it rest for a few minutes to relax the gluten.
-
Step 7.
Spread the 1 cup of soft butter evenly over the entire surface of the dough. Sprinkle the brown sugar-cinnamon mixture evenly over the butter.
-
Step 8.
Starting from a long edge, roll the dough up very tightly into a log, pinching the seam to seal. With a knife, make a notch every 2 inches along the log to mark the cuts. Use a piece of thread or a sharp knife to cut the rolls at each notch.
-
Step 9.
Place the rolls on the prepared cookie sheet(s), spacing them about 2 inches apart. Lightly press down on each roll with your hand to flatten slightly. Cover the rolls with a clean towel and let them rise until doubled, about 30–45 minutes.
-
Step 10.
Preheat the oven to 350°F (175°C). Bake the rolls for 15–20 minutes, until they start to turn golden brown. Watch carefully and remove them as soon as they are golden—do not overbake, or they will dry out.
-
Step 11.
While the rolls bake, prepare the Cream Cheese Frosting (recipe not included). As soon as the rolls come out of the oven, frost them while still warm. Serve warm or at room temperature.
