Let's Cook

  1. Step 1.

In a large mixing bowl, beat the eggs until well blended. Add the sugar, shortening, and vanilla, and beat until combined.

  2. Step 2.

Add the mashed potatoes and milk to the egg mixture. Using an electric mixer, beat until the mixture is smooth and no lumps remain.

  3. Step 3.

Add the flour, baking powder, salt, and nutmeg. Stir with a spoon until just combined, then gradually stir in additional flour until the dough reaches a batter-like consistency. It should still be somewhat sticky; it will pick up more flour when you roll it out on a floured surface.

  4. Step 4.

Cover the bowl and chill the dough for several hours or overnight. This allows the dough to firm up and the flavors to meld.

  5. Step 5.

While the dough chills, prepare for frying: preheat oil in a deep fryer to 375°F (use a thermometer if you're using a Fry Daddy).

  6. Step 6.

Take a portion of the chilled dough and place it on a well-floured surface. Roll it out to about 3/8 to 1/2 inch thickness, using flour as needed to prevent the rolling pin from sticking.

  7. Step 7.

Using a donut cutter, cut out the donuts from the rolled dough. Gather any scraps, re-roll, and cut more donuts.

  8. Step 8.

Carefully place 3-4 donuts at a time into the preheated oil. Fry, turning once, until they are a nice golden brown on both sides. Drain on brown paper bags to remove excess grease.
