Let's Cook

  1. Step 1.

Combine all the ingredients in a pot, stirring them together until evenly mixed. Use a pot large enough to hold everything with some headroom, and scrape the bottom and sides as you stir so nothing clumps or sticks.

  2. Step 2.

Cover the pot with a lid and set it over the heat, then bring the mixture to a simmer. Watch for the first steady bubbles breaking the surface rather than a full rolling boil.

  3. Step 3.

Once simmering, reduce the heat to maintain a gentle, steady simmer and cook for about 30 minutes, stirring occasionally, until the ingredients are tender and the flavors have melded. Keep the pot covered between stirs to hold in moisture and heat, and stir every several minutes, scraping the bottom to prevent sticking.

  4. Step 4.

During the simmer, check the texture as you stir: the ingredients should become tender enough to pierce easily, and the liquid should look slightly thickened and cohesive. If it reduces too quickly, lower the heat a touch; if it seems dry, keep the lid on more tightly between stirs.
