Let's Cook

  1. Step 1.

Cook the rice according to the package directions. While the rice cooks, prepare the vegetables and other components so they are ready when needed.

  2. Step 2.

In a large skillet, melt the butter over medium heat. Add the onions, carrots, and scallions and sauté, stirring occasionally, until the carrots are translucent and the onions are softened, about 5 to 7 minutes. Remove from the skillet and set aside.

  3. Step 3.

Meanwhile, heat the oven to 350 degrees. Place the sesame seeds in a shallow pan and bake, shaking the pan occasionally for even color, until golden brown, 10 to 15 minutes. Keep an eye on them to prevent burning.

  4. Step 4.

While the sesame seeds toast, lightly grease another skillet and place it over medium heat. Beat the eggs in a bowl, then pour them into the hot skillet. Cook, stirring gently, as you would scrambled eggs, until just set. Remove from heat.

  5. Step 5.

In a large bowl or the skillet used for the vegetables, combine the cooked rice, sautéed vegetables, toasted sesame seeds, and scrambled eggs. Add soy sauce to taste and stir gently to combine. Season with salt and pepper to taste, then serve.
