In a large bowl, whisk together 2 egg whites and 1 tablespoon lemon juice until frothy, about 30 seconds.

Gradually add 3 cups powdered sugar, whisking continuously until the icing is thick and smooth. If the icing seems too thin, add more powdered sugar, 1 tablespoon at a time, until desired consistency is reached.

Divide the icing into separate bowls and add food coloring to each bowl, stirring until evenly tinted. Use immediately to frost cookies or spread between graham crackers for a snack.
