Let's Cook

  1. Step 1.

    Wash, quarter, and core 2½ lbs cooking apples. Place them in a large pot and add about 1 cup of water, or enough to barely cover the apples.

  2. Step 2.

    Bring the apples to a boil over medium-high heat, then reduce heat to medium-low and simmer, stirring occasionally, until the apples are nearly soft, about 15–20 minutes.

  3. Step 3.

    Stir in ½ cup sugar and 1 tablespoon lemon juice. If desired, add a pinch or two of nutmeg and cinnamon for extra flavor.

  4. Step 4.

    Continue cooking for a few more minutes, stirring frequently, until the sugar is dissolved and the apples are very tender.

  5. Step 5.

    Remove the pot from heat and mash the apples with a potato masher or fork to your desired consistency. Let the applesauce cool slightly before serving or storing.
