Cinnamon Spice
A simple cinnamon-allspice glaze for doughnuts, made with confectioners' sugar and milk or water. It sets in minutes for a quick topping.

Step 1.
In a medium bowl, combine 1½ cups (180 grams) sifted confectioners' sugar, a pinch of kosher salt, ½ teaspoon ground cinnamon, and ½ teaspoon ground allspice. Whisk until evenly mixed.

Slowly stir in 3 to 4 tablespoons of milk or water, a little at a time, until the glaze is smooth and pourable. You may not need all the liquid; stop when the desired consistency is reached.

Dip the top of each doughnut into the glaze, then gently shake to remove excess. For an allover glaze, flip and dip the other side as well.

Allow the glazed doughnuts to set for 5 to 10 minutes before serving.
