Chunky Guacamole
A chunky guacamole made with diced avocado, onion, cilantro, jalapeño, and lime juice. Perfect for dipping with tortilla chips.

- 2 tbsp cilantro chopped
- 0.5 jalapeño seeded and finely chopped
- 1 tbsp fresh lime juice

Prepare
- Dice 2 small ripe avocados
- small white onion, finely chopped
- Chop 2 tbsp cilantro
- 0.5 jalapeño, seeded and finely chopped

Step 1.
If using raw onion and you prefer a milder flavor, soak the finely chopped white onion in a small bowl of water for a few minutes, then drain well.

In a medium bowl, gently combine the diced avocados, soaked (or unsoaked) onion, chopped cilantro, seeded and finely chopped jalapeño, fresh lime juice, and ½ teaspoon kosher salt. Stir gently until just mixed, being careful not to mash the avocado too much; you want chunky pieces.

Taste and adjust seasoning with additional salt or lime juice if desired. Serve immediately with tortilla chips.
