- ½ cup sugar
- ¼ cup Dutch-process cocoa powder, sifted
- 2 tablespoons cornstarch
- ¼ teaspoon salt
- 1 cup milk
- 1 cup heavy cream
- 2 ounces semisweet or bittersweet chocolate (up to 64% cacao), chopped
- 1 teaspoon vanilla

Whisk together in a medium saucepan: ½ cup sugar; ¼ cup Dutch-process cocoa powder, sifted; 2 tablespoons cornstarch; ¼ teaspoon salt

Whisk into the sugar mixture: 1 cup milk; 1 cup heavy cream

Bring to just under a simmer over medium heat, whisking constantly. When the mixture thickens, remove from the heat and whisk in: 2 ounces semisweet or bittersweet chocolate (up to 64% cacao), chopped; 1 teaspoon vanilla

Let cool completely. Freeze and unmold as described in Fruit Ice Pops.
