   Prepare Vanilla Pots de Crème. When the milk or half-and-half starts to steam, remove from the heat and whisk in 5 ounces bittersweet chocolate (up to 64% cacao), finely chopped. Proceed as directed. The custards will be set in 25 to 30 minutes.
