Chocolate-Pecan Tortoises

Pecan clusters topped with butterscotch caramel and a chocolate coating, finished with a sprinkle of flaky sea salt. A sweet, crunchy, and chewy homemade candy.

Ingredients

  • 2 cups pecan halves, toasted

    • 2 ¼ cups packed light brown sugar
    • 2 sticks (8 ounces) unsalted butter, cut into pieces
    • 1 cup heavy cream
    • ½ cup dark corn syrup
    • ¼ cup light corn syrup
    • 2 teaspoons vanilla
    • ¼ teaspoon salt
    Sub-recipe steps
    1. Please read About Caramel Candies. Line an 8-inch square pan with buttered parchment paper or foil that extends over two sides and set aside. Combine in a large heavy saucepan over medium heat: 2 ¼ cups packed light brown sugar; 2 sticks (8 ounces) unsalted butter, cut into pieces; 1 cup heavy cream; ½ cup dark corn syrup; ¼ cup light corn syrup
    2. Stir with a wooden spoon until the sugar is dissolved, about 5 minutes, then wash down the sides of the pan with a pastry brush dipped in warm water. Cook, stirring constantly, until the mixture comes to a boil. Increase the heat to medium-high and wash down the sides of the pan again. Cook to 248°F, the firm-ball stage. Remove the pan from the heat and quickly stir in: 2 teaspoons vanilla; ¼ teaspoon salt
    3. Pour into the prepared pan. Let cool until firm, 4 to 12 hours, then use the foil or parchment paper to lift the caramels out of the pan. Cut, wrap, and store, above.
  • 6 ounces semisweet or milk chocolate

Gather these ingredients - no prep needed yet.

  • 2 cups pecan halves, toasted
  • 1 ½ batch Butterscotch Caramels
  • 6 ounces semisweet or milk chocolate
  • (Flaky sea salt)

Let's Cook

  1. Step 1.

    Lightly grease 2 baking sheets or line them with silicone liners. Arrange on the sheets in groups of 4: 2 cups pecan halves, toasted

  2. Step 2.

    Prepare: ½ batch Butterscotch Caramels

  3. Step 3.

    Transfer the caramel to a small bowl for 10 to 15 minutes to cool slightly. Working quickly and using a greased spoon, spoon a scant tablespoon of caramel over the center of each pecan group. Let the caramel cool for 30 minutes.

  4. Step 4.

    Temper or melt: 6 ounces semisweet or milk chocolate

  5. Step 5.

    Spoon a scant teaspoon of chocolate over each caramel candy. If desired, sprinkle each candy with a pinch of: (Flaky sea salt)

  6. Step 6.

    Refrigerate for 20 minutes to set the chocolate. Store the candies between layers of wax or parchment paper in an airtight container in the refrigerator for up to 3 weeks or in the freezer for up to 2 months. If frozen, thaw for 24 hours in the refrigerator. Remove the tortoises from the refrigerator 30 minutes before serving.
