Chocolate–peanut Butter
A doughnut version of a Reese's Peanut Butter Cup, filled with creamy peanut butter and topped with chocolate or sugar glaze.

- 1 Chocolate Raised dough
- 1 cup creamy peanut butter
- 2/3 cup confectioners' sugar
- 1 Chocolate or Basic Sugar glaze

- 3 tbsp unsalted butter, at room temperature

Step 1.
Prepare the Chocolate Raised dough for filled doughnuts and fry as directed. Let the fried doughnuts cool completely before filling.

Step 2.
In a medium bowl, combine 1 cup creamy peanut butter and 3 tablespoons unsalted butter at room temperature. Using a hand mixer on medium speed, whip until creamy and well blended.

Step 3.
Sift ⅔ cup (80 grams) confectioners’ sugar into the peanut butter mixture. Beat on medium speed until light and fluffy, about 2 minutes.

Step 4.
Spoon the peanut butter filling into a pastry bag fitted with a Bismarck (#230) tip. Hold a cooled doughnut in one hand, plunge the tip into the side of the doughnut about ¾ inch deep. Gently squeeze the pastry bag to fill the doughnut, withdrawing the tip slowly as you squeeze; you will feel the doughnut expand slightly. Repeat with the remaining doughnuts.

Glaze the top of each filled doughnut with Chocolate or Basic Sugar glaze. Let the glaze set before serving.
