A rich and moist chocolate cake made with mayonnaise, which adds tenderness and depth. Perfect for birthdays or any celebration.

Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 4 ounces (115g) unsweetened chocolate, finely chopped
  • 1 ⅔ cups (330g) sugar
  • 3 large eggs
  • 1 teaspoon vanilla
  • ¾ cup mayonnaise
  • 1 ⅓ cups (315g) water
  • 1
    • 1 cup evaporated milk or heavy cream
    • 6 ounces unsweetened chocolate, coarsely chopped
    • 1 ½ cups sugar
    • 6 tablespoons (¾ stick) unsalted butter, cut into small pieces
    • 1 teaspoon vanilla or other extract such as peppermint or orange
    Sub-recipe steps
    1. Bring to a boil in a small saucepan: 1 cup evaporated milk or heavy cream
    2. Remove from the heat and add: 6 ounces unsweetened chocolate, coarsely chopped
    3. Cover and let stand, without stirring, for 10 minutes. Scrape into a food processor or blender and add: 1 ½ cups sugar; 6 tablespoons (¾ stick) unsalted butter, cut into small pieces; 1 teaspoon vanilla or other extract such as peppermint or orange
    4. Process until the mixture is perfectly smooth, 1 minute or more. Transfer to a bowl. If necessary, let stand for a few minutes (longer if you used cream), until thickened to the desired spreading consistency. This keeps, refrigerated, for up to 1 week if made with cream, or for up to 3 weeks if made with evaporated milk.

  • 2 cups (250g) all-purpose flour

  • 1 3 cups any chocolate frosting

Let's Cook

  1. Step 1.

    Whisk together in a medium bowl: 2 cups (250g) all-purpose flour; 1 teaspoon baking soda; ½ teaspoon baking powder

  2. Step 2.

    Melt in a double boiler or heatproof bowl set over barely simmering water: 4 ounces (115g) unsweetened chocolate, finely chopped

  3. Step 3.

    Set aside to cool slightly. Beat in a large bowl, or in a stand mixer with the paddle attachment, at medium-high speed until light, about 3 minutes: 1 ⅔ cups (330g) sugar; 3 large eggs; 1 teaspoon vanilla

  4. Step 4.

    Add to the melted chocolate, mixing until smooth: ¾ cup mayonnaise

  5. Step 5.

    Beat the chocolate-mayonnaise mixture into the batter. On low speed, add the flour mixture in 3 parts, alternating with: 1 ⅓ cups (315g) water

  6. Step 6.

    in 2 parts, beating until smooth. Scrape the batter into the prepared pan(s). Bake until a toothpick inserted in the center comes out clean, 30 to 40 minutes.

  7. Step 7.

    Let the 13 × 9-inch cake cool in the pan on a rack. For round layers, let cool in the pans on a rack for 10 minutes, then remove from the pans, peel off the parchment, and let cool on the rack.

  8. Step 8.

    Fill and frost with: 3 cups any chocolate frosting
