8 servings We have taken to calling this gooey, intensely chocolaty dessert a “molten brownie.” The process for making it is unusual, but do not stray from the instructions and you will be rewarded.

Ingredients

  • 4 tablespoons (2 oz or 55g) butter
  • 1 cup (125g) all-purpose flour
  • ½ cup packed (115g) brown sugar
  • ¼ cup (20g) unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup (120g) milk
  • 1 teaspoon vanilla
  • (Finely grated zest of 1 orange)
  • 4 ounces (115g) semisweet, bittersweet, or dark chocolate (up to 70% cacao), chopped
  • ½ cup (100g) sugar
  • ½ cup packed (115g) brown sugar
  • ¼ cup (20g) unsweetened cocoa powder
  • 1 ¼ cups (295g) boiling water

  • ½ cup packed (115g) brown sugar
  • ¼ cup (20g) unsweetened cocoa powder
  • 1 ¼ cups (295g) boiling water

Let's Cook

  1. Step 1.

    Preheat the oven to 350°F. Place in an 8- or 9-inch square baking dish: 4 tablespoons (2 oz or 55g) butter

  2. Step 2.

    Place in the oven until the butter is melted, then remove and set aside.

  3. Step 3.

    Whisk together in a medium bowl: 1 cup (125g) all-purpose flour; ½ cup packed (115g) brown sugar; ¼ cup (20g) unsweetened cocoa powder; 1 ½ teaspoons baking powder; ½ teaspoon salt

  4. Step 4.

    Pour the melted butter out of the baking dish into the flour mixture and whisk in, along with: ½ cup (120g) milk; 1 teaspoon vanilla; (Finely grated zest of 1 orange)

  5. Step 5.

    Spread the flour mixture in the baking dish and sprinkle with: 4 ounces (115g) semisweet, bittersweet, or dark chocolate (up to 70% cacao), chopped

  6. Step 6.

    Mix together in a medium bowl: ½ cup (100g) sugar; ½ cup packed (115g) brown sugar; ¼ cup (20g) unsweetened cocoa powder

  7. Step 7.

    Sprinkle the sugar mixture over the chocolate in the baking dish. Pour over the top, but do not mix in: 1 ¼ cups (295g) boiling water

  8. Step 8.

    Bake until barely set in the middle, 30 to 35 minutes. Let cool for 10 minutes before serving.
