Chinese Tiger Salad
A crunchy and refreshing Chinese salad made with spring onions, bell peppers, baby leeks, and cilantro, tossed in a soy-sesame dressing. Perfect as a side dish or appetizer.

- 6 spring onions (scallions) finely sliced on a diagonal
- 1 red (bell) pepper deseeded and finely sliced
- 1 green (bell) pepper deseeded and finely sliced
- 2 baby leeks halved lengthways and finely sliced
- 2 coriander (cilantro) leaves finely chopped
- 1 red chilli finely sliced
- sesame seeds to serve
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 1 tsp sesame oil
- 1 tbsp sesame seeds
- 1/2 tsp chilli flakes

Step 1.
In a large bowl, whisk together the soy sauce, rice wine vinegar, sesame oil, sesame seeds, and chili flakes until well combined.

Add the finely sliced spring onions, red bell pepper, green bell pepper, baby leeks, chopped cilantro, and sliced red chili to the bowl with the dressing. Toss everything together until all the vegetables are evenly coated.
