Chilli & Lime Fruit Salad
A refreshing fruit salad with a spicy-sweet lime and chili syrup, served with yogurt.

- 90 g caster sugar
- 5 cinnamon stick
- 2 star anise
- 1/4 tsp chilli flakes
- 2 limes juiced
- 3 passion fruit seeds and pulp
- 1 mango peeled, pitted and roughly chopped
- 0.5 pineapple peeled, cored and roughly chopped
- 1 papaya peeled, deseeded and roughly chopped
- natural yogurt to serve

- Juice 2 limes
- 3 passion fruit, seeds and pulp
- 1 mango, peeled, pitted and roughly chopped
- 0.5 pineapple, peeled, cored and roughly chopped
- 1 papaya, peeled, deseeded and roughly chopped
- natural yogurt, to serve

Step 1.
Put the sugar, cinnamon stick, star anise, and chilli flakes into a large pan with 250ml (1 cup) water. Bring to a boil over high heat, stirring continuously for 1 minute until the sugar has dissolved. Reduce the heat to medium and simmer, shaking the pan occasionally, for 10 minutes until the liquid reduces to a thin syrup. Transfer the syrup to a mixing bowl and set aside to cool. Remove the cinnamon stick to prevent its flavor from overpowering the dressing, but reserve it for decoration.

Once the syrup has cooled, pour in the lime juice and passion fruit pulp and seeds. Mix well. Add the chopped mango, pineapple, and papaya, then toss together until the fruit is evenly coated with the spicy, sweet-sour dressing.

Step 3.
Serve the fruit salad at room temperature or chilled, with a generous dollop of natural yogurt on top. Arrange the reserved star anise and cinnamon stick on top for decoration.
