Prepare
- 3/4 lbs chicken sausage, casings removed
- Mince 0.5 medium sweet onion
- Beat 6 eggs
- Dice 1 plum tomato
- 1 tbsp flat-leaf parsley, finely chopped
Let's Cook
-
Step 1.
Heat the vegetable oil in a wok over medium-high heat until shimmering.
-
Step 2.
Add the chicken sausage (casings removed) and crumble it with a spatula as it browns and cooks through, about 6 to 7 minutes.
-
Step 3.
Add the minced sweet onion to the wok and cook, stirring occasionally, until softened, about 5 minutes.
-
Step 4.
Reduce the heat to medium. Pour the beaten eggs into the wok and cook without stirring until they just begin to firm up, 1 to 2 minutes.
-
Step 5.
Stir in the crumbled goat cheese, diced plum tomato, and chopped parsley. Season with salt and pepper to taste. Continue cooking, stirring gently, until the eggs reach your desired doneness.
-
Step 6.
Dish up the scramble and drizzle with hot sauce if desired.
