Prepare

  • Mince 3 medium cloves garlic
  • 1 small head cauliflower (about 1 pound), cut into 1-inch florets
  • 1 medium eggplant (about ½ pound), cut into 1-inch cubes
  • Thaw 1 cup frozen peas
  • Chop 1/4 cup fresh cilantro

Let's Cook

  1. Step 1.

    Heat 2 tablespoons of high-heat oil (such as canola or safflower) in a 10-inch skillet over medium heat. Add the thinly sliced small yellow onion and cook until soft, about 5 minutes, stirring occasionally.
