Prepare

  • 5 large carrots, peeled and grated
  • 1 bunch fresh coriander/cilantro, leaves and stalks roughly chopped
  • 75 g peanuts, coarsely ground in a pestle and mortar
  • 0.5 lemon, juice of

Let's Cook

  1. Step 1.

    In a large bowl, combine the peeled and grated carrots, chopped coriander leaves and stalks, coarsely ground peanuts, lemon juice, caster sugar, and salt. Mix well until all ingredients are evenly distributed.

  2. Step 2.

    Let the salad stand for 10 minutes at room temperature to allow the carrots to release their natural flavors and soften slightly.

  3. Step 3.

    Just before serving, stir the salad again to recombine any settled juices. Garnish with a little fresh coriander.
