- 1/4 cup brown sugar
- 1/4 cup superfine sugar
- 1/4 tsp sea salt
- 1/2 cup confectioners' sugar

Let's Cook
-
Step 1.
In a heavy-bottomed pot over medium heat, combine ¼ cup whole milk, 2½ tablespoons unsalted butter, ¼ cup brown sugar, ¼ cup superfine sugar, and ¼ teaspoon sea salt. Cook for 3 minutes, stirring occasionally, until the mixture is smooth and bubbling. Remove from heat and let cool for about 5 minutes.

Step 2.
While the caramel cools, sift ½ cup confectioners’ sugar into the bowl of a stand mixer fitted with the paddle attachment. Pour the cooled caramel mixture over the sifted sugar. Beat on medium speed until fully incorporated and smooth, about 1 minute. Add 1 teaspoon vanilla extract (if using) and beat on low speed until combined.
