  • 1/4 cup sour cream
  • 1 tbsp fresh lemon juice
  • 3 tbsp Buffalo-style hot sauce
  • Potato chips
  • celery sticks

Prepare

  • 4 oz cream cheese, at room temp
  • 1 1/2 cup finely shredded white-meat rotisserie chicken, finely shredded
  • 4 oz Monterey Jack cheese, coarsely grated
  • 1 scallion, finely chopped
  • 1 oz blue cheese, crumbled

Let's Cook

  1. Step 1.

    Preheat the oven to 425°F. In a medium bowl, whisk together the room-temperature cream cheese, sour cream, fresh lemon juice, and Buffalo-style hot sauce until smooth and well combined.

  2. Step 2.

    Fold in the finely shredded rotisserie chicken, coarsely grated Monterey Jack cheese, and finely chopped scallion until evenly distributed.

  3. Step 3.

    Divide the mixture evenly between two 8-ounce ramekins. Sprinkle the crumbled blue cheese on top of each ramekin.

  4. Step 4.

    Bake until the dip is golden brown and bubbly, 12 to 15 minutes. Let cool slightly, then serve with potato chips and celery sticks for dipping.
