Breakfast Sausage WITH Fennel AND SAGE
Homemade breakfast sausage patties seasoned with fennel, sage, and thyme. Easy to make and perfect for a hearty breakfast.
Ingredients
- 3 tsp packed light brown sugar

- 1 tbsp packed minced fresh sage minced

- 1 1/2 lbs ground pork
- 1 tbsp canola oil

- 1/2 tsp red pepper flakes
- 1/2 tsp freshly ground black pepper
- 1 1/2 lbs ground pork
- 1 tbsp canola oil
Prepare
- Mince 1 tbsp packed minced fresh sage
- Mince 1 tsp packed minced fresh thyme

Step 1.
Preheat the oven to 200°F and place a baking sheet on the center rack to warm.

In a medium bowl, whisk together the brown sugar (if using), dried sage, kosher salt, fennel seeds, dried thyme, garlic powder, red pepper flakes, and black pepper until combined.

Add the ground pork to the spice mixture and mix with your hands until everything is evenly incorporated.

Divide the pork mixture into 12 equal portions (about 2 ounces each) and shape each into a patty about ½ inch thick and 3 inches in diameter. Place the patties on a platter.

Heat the canola oil in a large cast-iron skillet over medium-high heat. Add half of the sausage patties and cook until well browned on the bottom, 2 to 3 minutes.

Flip the patties, pressing down with a silicone spatula to thin them slightly, and cook until cooked through and browned on the second side, about 2 minutes more. If the pan seems dry, add a little more oil during cooking.

Transfer the cooked sausages to the warm baking sheet in the oven to keep warm while you cook the remaining patties in the same skillet, adding more oil if needed.

Serve the sausages immediately.
