Ingredients

Servings:
  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • ¼ cup bourbon or dark rum
  • 2 tablespoons light corn syrup
  • 2 ½ cups vanilla wafer crumbs (from one 11-ounce box)
  • 1 cup coarsely chopped pecans, toasted
  • ½ cup powdered sugar
  • (Tempered chocolate)

Let's Prepare

Collect

Gather these ingredients - no prep needed yet.

  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • ¼ cup bourbon or dark rum
  • 2 tablespoons light corn syrup
  • 2 ½ cups vanilla wafer crumbs (from one 11-ounce box)
  • 1 cup coarsely chopped pecans, toasted
  • ½ cup powdered sugar
  • (Tempered chocolate)

Let's Cook

  1. Step 1.

    Sift together into a medium bowl: 1 cup powdered sugar; 2 tablespoons unsweetened cocoa powder

  2. Step 2.

    Whisk together in a small bowl until well mixed: ¼ cup bourbon or dark rum; 2 tablespoons light corn syrup

  3. Step 3.

    Stir the rum mixture into the cocoa mixture and set aside. Combine in a medium bowl: 2 ½ cups vanilla wafer crumbs (from one 11-ounce box); 1 cup coarsely chopped pecans, toasted

  4. Step 4.

    Stir into the cocoa mixture. If the mixture seems dry, add up to 1 tablespoon bourbon or rum a few drops at a time until the mixture holds together.

  5. Step 5.

    Roll the mixture into balls between your palms (the balls do not have to be even). Roll in: ½ cup powdered sugar

  6. Step 6.

    Or, if desired, dip in: (Tempered chocolate)

  7. Step 7.

    Store between layers of wax paper in an airtight container at room temperature for up to 3 weeks.
