Bourbon-Molasses Glaze
About 1 cup A boozy glaze for baked ham, roast chicken, grilled salmon, or pork chops.
Ingredients
- 1 cup bourbon
- 1 cup light molasses, maple syrup, sorghum syrup, or honey, or a combination
- 1 tablespoon Worcestershire sauce
- (1 tablespoon Dijon mustard)
- One 3-inch-long strip orange zest, removed with a vegetable peeler
- ¼ teaspoon ground cloves or allspice
- 1 bay leaf

Simmer over medium heat until the mixture has reduced by half and coats the back of a spoon, about 15 minutes. Remove the orange zest and bay leaf before using.
