- Chop 1 tbsp chipotle pepper in adobo

Step 1.
In a medium saucepan over medium heat, heat 1½ teaspoons olive oil. Add ¼ cup finely diced red onion and sauté for 5 minutes, until translucent but not caramelized; reduce heat if you see any browning.

Add 2 cloves minced garlic and cook for 1 minute until soft.

Add 1 cup ketchup, ¼ cup apple cider vinegar, ¼ cup bourbon, ¼ cup cherry jam, 1 tablespoon blackstrap molasses, 1 tablespoon dark brown sugar, 1 tablespoon chopped chipotle pepper in adobo, ¼ teaspoon kosher salt, and ⅛ teaspoon cayenne pepper. Stir to combine, then bring to a simmer. Cover the saucepan to prevent splattering and simmer for 10 minutes.

Remove from heat and allow the glaze to cool. Transfer to an airtight jar and refrigerate. The glaze will keep for up to 1 week.
