Boiled crayfish served in the shell with melted butter and optional seasonings. A simple, hands-on dish perfect for casual dining.

Ingredients

Servings:
  • Fresh crayfish, cleaned, above, or frozen whole crayfish
  • 1 leek, halved and cleaned, or 1 small onion, chopped
  • Parsley sprigs
  • 1 carrot, chopped
  • (3 tablespoons distilled white or cider vinegar)
  • Melted butter
  • 1
    • 2 tbsp sweet paprika
    • 2 tsp dried thyme
    • 2 tsp dried oregano
    • 2 tsp cayenne pepper
    • 2 tsp coarsely cracked black peppercorns
    • 1 tsp salt
    Sub-recipe steps
    1. In a small bowl, combine the sweet paprika, dried thyme, dried oregano or marjoram, cayenne pepper, coarsely cracked peppercorns, and salt. Stir with a fork or small whisk until the spices are evenly distributed. Set aside until ready to use.

Let's Cook

  1. Step 1.

    Have ready: Fresh crayfish, cleaned, above, or frozen whole crayfish

  2. Step 2.

    Fill a large pot with water and add: 1 leek, halved and cleaned, or 1 small onion, chopped; Parsley sprigs; 1 carrot, chopped; (3 tablespoons distilled white or cider vinegar)

  3. Step 3.

    Bring to a boil. Drop the crayfish one by one into the boiling water at a rate that will not disturb the boil and cook no longer than 5 to 7 minutes, until the shells turn red. Serve in the shell, with plenty of: Melted butter

  4. Step 4.

    seasoned with: Minced dill or Cajun Blackening Spice

  5. Step 5.

    Crayfish are eaten with the fingers; serve with napkins and finger bowls. Separate the tail from the body, and crack open the tail by holding it between the thumbs and forefingers of both hands and forcing it back against the curve of the shell.
