  • 1/2 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1/4 tsp baking powder
  • kosher salt
  • 1/3 cup whole milk
  • 2 tsp pure vanilla extract
  • 1 tsp grated lemon zest
  • 1/4 cup fresh or frozen blueberries

Prepare

  • Melt 2 tbsp unsalted butter

Let's Cook

  1. Step 1.

    In a 12-ounce microwave-safe mug, whisk together ½ cup all-purpose flour, 2 tablespoons granulated sugar, ¼ teaspoon baking powder, and ⅛ teaspoon kosher salt until combined.

  2. Step 2.

    Stir in ⅓ cup whole milk, 2 tablespoons melted unsalted butter, 2 teaspoons pure vanilla extract, and 1 teaspoon grated lemon zest until a smooth batter forms.

  3. Step 3.

    Gently fold in ¼ cup fresh or frozen blueberries (frozen work best) until evenly distributed, being careful not to overmix.

  4. Step 4.

    Microwave the mug on High until the cake is just cooked through and springs back when lightly touched, about 1½ to 2 minutes. Let cool for 1 minute before serving.
