Blackened Salmon With Cajun Garlicky Kale

Blackened salmon fillets seasoned with Cajun spices, served with garlicky kale sautéed with lemon zest and Cajun seasoning. A quick and flavorful one-skillet meal.

  • Cajun seasoning
  • Sprinkle the salmon fillets with Cajun seasoning and sea salt. Heat the oil in a 10-inch cast iron skillet over medium heat until the oil is very hot. 
  • Carefully place salmon on the hot skillet flesh-side down and cook for 3 minutes. Carefully flip and cook on the skin side for 6 minutes. Continue cooking and flipping until the salmon is cooked through (depending on the thickness of the salmon, this may take an additional 2 to 10 minutes).
  • Remove the cast iron skillet from the heat and transfer the salmon to a plate.
  • Allow the skillet to cool until it is no longer smoking. Place skillet back on the burner over low heat. Add the oil and garlic. Saute, stirring frequently, until garlic has softened, about 2 minutes. Add the chopped kale, lemon zest and Cajun seasoning. Cover and cook until kale has wilted, about 2 minutes. Remove cover and continue cooking until any excess liquid has burned off.
  • Serve Salmon with Garlicky Cajun Kale.

Let's Cook

  1. Step 1.

    Season the salmon fillets evenly with 1 tablespoon Cajun seasoning and 1/4 teaspoon sea salt. Set aside.

  2. Step 2.

    Heat 1 1/2 tablespoons avocado oil in a 10-inch cast iron skillet over medium heat until the oil is very hot and shimmering.

  3. Step 3.

    Carefully place the seasoned salmon fillets flesh-side down in the hot skillet. Cook for 3 minutes without moving.

  4. Step 4.

    Carefully flip the salmon using a spatula and cook on the skin side for 6 minutes. Continue cooking and flipping as needed until the salmon is cooked through (depending on thickness, this may take an additional 2 to 10 minutes). The salmon should flake easily with a fork.

  5. Step 5.

    Remove the skillet from heat and transfer the cooked salmon to a plate. Let the skillet cool until it is no longer smoking, then return it to the burner over low heat.

  6. Step 6.

    Add 1 tablespoon avocado oil and the minced garlic to the cooled skillet. Sauté, stirring frequently, until the garlic has softened, about 2 minutes.

  7. Step 7.

    Add the chopped kale, 1 teaspoon lemon zest, and 1/2 teaspoon Cajun seasoning to the skillet. Cover and cook until the kale has wilted, about 2 minutes. Remove the cover and continue cooking until any excess liquid has evaporated.

  8. Step 8.

    Serve the blackened salmon alongside the garlicky Cajun kale.
