Bhatura
Bhatura is a soft, leavened Indian fried bread made with yogurt. It is traditionally served with chickpea curry (chole) as a popular street food combination.

Step 1.
In a large mixing bowl, combine 175ml (6fl oz / ⅔ cup) warm water with 1 tsp sugar and 2 tsp fast-action dried yeast. Stir with a spoon and let stand for 5 minutes until the mixture becomes frothy and bubbly.

Step 2.
Add 240g (8½oz / generous 1½ cups) plain flour, 1½ tbsp plain yogurt, 1 tbsp melted ghee, and a pinch of salt to the yeast mixture. Mix well until a dough forms, adding a splash more water if needed to achieve a soft dough. Knead on a lightly floured surface for at least 8 minutes until smooth and elastic. Cover the dough with a damp cloth and let it prove for 30 minutes, or until it has increased slightly in volume.

Step 3.
After proving, divide the dough into 8 equal portions. Lightly flour your work surface and roll each portion into a 14cm (5½ inch) circle. Set the circles aside on a floured tray.

Step 4.
Place a large non-stick frying pan over medium heat and add about 5cm (2 inches) of vegetable oil. To test if the oil is ready, drop a small piece of dough into the oil; it should sizzle and float to the top immediately.

Step 5.
Fry the bhaturas one at a time: carefully slide a dough circle into the hot oil. Fry until golden brown on the bottom, then flip and cook the other side until golden brown all over. Remove with a slotted spoon and drain on paper towels. Serve immediately.
