  • 2 tsp salt
  • 1 tsp chili powder
  • 1/4 tsp black pepper
  • 1 diced tomatoes
  • 1 corn
  • 1 1/4 cup beef bouillon
  • 1 1/3 cup Minute rice

Prepare

  • Dice 1/4 cup onion
  • 1/2 cup green pepper, thin strips

Let's Cook

  1. Step 1.

    In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon, until no longer pink, about 5–7 minutes. Drain off excess fat.

  2. Step 2.

    Add the diced onion to the skillet with the beef and cook over medium heat, stirring occasionally, until the onion is tender, about 3–4 minutes.

  3. Step 3.

    Stir in the salt, chili powder, black pepper, diced tomatoes (with their juices), corn (drained), and beef bouillon. Increase heat to high and bring the mixture to a boil.

  4. Step 4.

    Once boiling, stir in the green pepper strips. Return to a boil, then immediately remove the skillet from the heat.

  5. Step 5.

    Stir in the Minute rice, cover the skillet with a lid, and let stand for 5 minutes without lifting the lid. The rice will absorb the liquid.

  6. Step 6.

    After 5 minutes, uncover and fluff the mixture with a fork. Serve hot, topped with cottage cheese if desired.
