BEEF Kebabs
4 to 6 servings For more on kebabs, please read Skewer Cooking. If using wooden skewers, soak them in water for at least 1 hour.
Ingredients
- 1 Vietnamese-Style Marinade, Thai-Style Lemongrass Marinade, Balkan Marinade, Beer Marinade, or any paste, or any dry rub (opens in new tab)
- 1 ½ pounds boneless beef top loin, sirloin, or hanger steak
- 1 onion, cut into small wedges
- (1 bell pepper, cut into 1-inch pieces)
- 1 Coconut Rice, Rice Pilaf, or Crispy Smashed Potatoes (opens in new tab)
- 1 Flatbread or Pita Sandwiches (opens in new tab)

Gather these ingredients — no prep needed yet.

Step 1.
Prepare one of the following: Vietnamese-Style Marinade, Thai-Style Lemongrass Marinade, Balkan Marinade, Beer Marinade, or any paste, or any dry rub

Step 2.
Cut into 1-inch cubes: 1 ½ pounds boneless beef top loin, sirloin, or hanger steak

Step 3.
Combine the beef in a bowl with: 1 onion, cut into small wedges; (1 bell pepper, cut into 1-inch pieces)

Add the marinade, paste, or rub and toss to coat. Cover and marinate in the refrigerator for at least 2 hours.

Step 5.
Place a broiler pan on a rack set 3 to 4 inches below the heat and preheat the broiler and broiler pan; or prepare a medium-hot grill fire. Thread the meat and vegetables onto skewers. Broil or grill for 8 to 10 minutes, turning the skewers occasionally. Make a small incision in a cube of meat and check the center: It should be slightly less done than desired, for it will continue to cook somewhat off the heat. Serve immediately with: Coconut Rice, Rice Pilaf, or Crispy Smashed Potatoes
