Becker Venison Medallions

4 servings Gentle cooking—and lots of butter—is sometimes the best approach for treasured backstrap and tenderloin medallions.
Ingredients
- 1 pound venison medallions
- Salt and black pepper
- 6 tablespoons (¾ stick) butter
- 3 tablespoons port or Madeira
- 1 Sautéed Mushrooms (opens in new tab)

- 1 pound venison medallions
- Salt and black pepper
- 6 tablespoons (¾ stick) butter
- 3 tablespoons port or Madeira
- 1 Sautéed Mushrooms
Let's Cook

Step 1.
Place one at a time between sheets of wax paper and gently pound until ¼ inch thick: 1 pound venison medallions

Step 2.
Season to taste with: Salt and black pepper

Melt in a large heavy skillet over medium heat: 6 tablespoons (¾ stick) butter

Step 4.
Add the medallions, in batches, and cook until browned, 1 to 2 minutes per side. Transfer the meat to a platter. Add to the skillet: 3 tablespoons port or Madeira

Step 5.
Warm the sauce for about 1 minute, then stir in any accumulated juices from the venison. Pour over the medallions and serve with: Sautéed Mushrooms
