Gather these ingredients — no prep needed yet.

  • 1 ½ pounds ground round or sirloin
  • 1 2 tablespoons bacon fat, lard, Clarified Butter, or vegetable oil
  • Black pepper
  • 2 tablespoons soy sauce
  • 2 tablespoons port
  • Several drops of hot pepper sauce

Let's Cook

  1. Step 1.

    Divide into 4 equal portions and form each into a patty about ¾ inch thick: 1 ½ pounds ground round or sirloin

  2. Step 2.

    Heat in a heavy skillet over medium-high heat: 2 tablespoons bacon fat, lard, Clarified Butter, or vegetable oil

  3. Step 3.

    Add the patties and cook for 2 minutes. Turn and cook on the other side for 4 minutes for medium-rare. Sprinkle the burgers generously with: Black pepper

  4. Step 4.

    and then: 2 tablespoons soy sauce; 2 tablespoons port; Several drops of hot pepper sauce

  5. Step 5.

    Remove the skillet from the heat, cover, and let stand for 5 minutes before serving.
