Gather these ingredients - no prep needed yet.

  • 2 sweet potatoes
  • 1/4 cup almond or peanut butter
  • 2 tbsp old-fashioned rolled oats or granola

Let's Cook

  1. Step 1.

    Preheat the oven to 400°F. Pierce each sweet potato 4–5 times with a fork and place them on a baking sheet. Bake for 30 minutes, or until tender when pierced with a toothpick.

  2. Step 2.

    Remove the sweet potatoes from the oven and let them cool for a few minutes. Then cut each sweet potato in half lengthwise.

  3. Step 3.

    Assemble each bowl: place one sweet potato half in each bowl, then top with half of the nut butter, half of the oats or granola, and any other desired toppings such as cinnamon, coconut, yogurt, cacao nibs, or chopped almonds.
