A savory bread strata layered with asparagus, onion, and a blend of goat and Gruyère cheeses, baked until golden and puffed.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 1 pound asparagus, trimmed and cut into 2-inch pieces
- 1 Basic Strata (opens in new tab)
- 4 ounces crumbled fresh goat cheese
- 4 ounces grated Gruyère or Swiss cheese
- Up to ⅓ cup chopped herbs such as basil and parsley

Heat in a large skillet over medium heat: 2 tablespoons olive oil

Add: 1 large onion, chopped

Cook, stirring frequently, until the onion is translucent, about 7 minutes. Stir in: 1 pound asparagus, trimmed and cut into 2-inch pieces

Cook, stirring frequently, until the asparagus is fork-tender, about 5 minutes. Remove from the heat. Proceed as for: Basic Strata

Use the asparagus mixture for the filling and for the cheese, use: 4 ounces crumbled fresh goat cheese; 4 ounces grated Gruyère or Swiss cheese

Add the goat cheese to the egg mixture and reserve the Gruyère or Swiss for sprinkling on top. Add to the egg mixture: Up to ⅓ cup chopped herbs such as basil and parsley
