  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp extra virgin olive oil
  • 2 tbsp rice vinegar

Prepare

  • Thaw 1 cup frozen shelled edamame

Let's Cook

  1. Step 1.

    Cook the buckwheat soba noodles according to package directions. Drain and rinse under cold water to stop cooking, then refrigerate until needed.

  2. Step 2.

    While the noodles cook, pat the sirloin steak dry with paper towels and season both sides with ¼ teaspoon each of salt and pepper. Heat a large skillet over medium-high heat, then add 1 tablespoon extra virgin olive oil. Place the steak in the skillet and cook to desired doneness, about 5 to 7 minutes per side for medium. Transfer the steak to a cutting board and let it rest for at least 5 minutes before slicing thinly against the grain.

    In a large bowl, whisk together 2 tablespoons rice vinegar, 2 teaspoons sesame oil, 1 teaspoon chile paste, and the remaining ½ teaspoon salt. Add the chilled soba noodles and 1 cup spiralized carrots, and toss well to coat. Gently fold in 1 cup thawed frozen shelled edamame, ½ cup mint leaves, and ½ cup cilantro leaves.

  4. Step 4.

    Divide the noodle mixture among serving bowls. Top with the sliced steak, toasted sesame seeds, and sliced scallions. Serve immediately.
