Almond Jelly With Fruit Cocktail
A refreshing almond-flavored gelatin dessert served with chilled fruit cocktail in syrup. This Chinese dessert is often enjoyed in hot weather for its cooling properties.

- 1/4 cup sugar
- 1 1/2 cup water
- 1 tbsp almond extract
- 1 cup low-fat milk

In a medium heatproof bowl, combine 2 (¼-ounce) envelopes Knox gelatin and ¼ cup sugar. Set aside.

In a small pot over high heat, bring 1½ cups water to a boil. Remove from heat.

Pour the boiling water into the bowl with the gelatin-sugar mixture and stir until the gelatin and sugar are completely dissolved.

Add 1 tablespoon almond extract and 1 cup low-fat milk to the gelatin mixture, and stir until well combined.

Pour the gelatin mixture into an 8-by-8-inch square baking dish (or divide among 4 to 6 dessert bowls). Refrigerate for at least 4 hours or up to overnight, until set.

To serve, cut the set gelatin into cubes (if using a baking dish) and divide among 4 to 6 bowls. Spoon the chilled canned fruit cocktail (including syrup) over the gelatin in each bowl, and serve immediately.
