Gather these ingredients - no prep needed yet.

  • 200 g Cauliflower rice
  • 120 g Broccoli florets
  • 80 g Red bell pepper
  • 50 g Shelled edamame
  • 80 g 0% Greek yogurt
  • 15 ml Reduced-salt soy sauce
  • 10 g Sriracha
  • 15 ml Lime juice
  • 5 g Sesame seeds
  • 1/2 tsp Smoked paprika

Prepare

  • 250 g Chicken breast, skinless
  • Grate 5 g Fresh ginger
  • Mince 1 clove Garlic
  • Slice 15 g Spring onion
  • Cooking spray, light coating

Let's Cook

  1. Step 1.

    Slice the chicken breast into bite-sized strips. Season with smoked paprika, garlic and fresh ginger. Heat a non-stick pan with a light coating of cooking spray. Cook the chicken for 6–8 minutes until browned and fully cooked. Add soy sauce and half the sriracha, tossing until the chicken is glazed. In another pan, cook the cauliflower rice, broccoli, pepper and edamame until tender but still slightly crisp. Mix Greek yogurt, lime juice and the remaining sriracha to create the Firecracker sauce. Add cauliflower rice and vegetables to a bowl and arrange the glazed chicken over the top. Drizzle with Firecracker sauce and finish with spring onion and sesame seeds.
